Does anyone know how to change piloting and gunnery values in Solaris Skunkwerks? It seems to always fill in the recordsheets with 4/5

Don't print from print preview (I just found this out as well.)
Go File>Print>Current Mech A dialog box with the relevant info will allow you to change them or tick the option not to include them on the sheet.
